Wild Game Sausage
Ingredients Needed:
1 lb. ground elk, deer, or other wild meat
2 Tablespoons Wyoming Steak Rub or Cowboy Cajun

We add 5% pork fat to the meat to bind it all together so it cooks easily. You can add more pork fat if you prefer.

In a large bowl mix the ground meat with either Wild West Spice. Shape the meat into patties, cook and enjoy! You can also make link sausage with this mixture. You will need to get sausage casing from your grocer.

Prairie Oven Fries with Chargin` Cheddar Bacon Dip
Ingredients Needed:
4 baking potatoes
1/4 cup olive oil
10-15 cloves of garlic, unpeeled
1/2 pint of sour cream (for the Chargin` Cheddar Dip)


Prairie Potato Blend - by Wild West Spices

Preheat oven to 400 degrees.

Lightly scrub the baking potatoes, do NOT peel, and cut lengthwise 1/2 inch x 1/2 inch thick slices. They should resemble steak fries. Toss the potatoes with the olive oil in a large bowl, coat thoroughly. Line a baking sheet with aluminum foil. Spray the foil with oil. Place the fries in a single layer on the baking sheet. Shake Prairie Potato Blend on the fries liberally. Bake fries in the oven for 25 minutes. Remove the baking sheet, flip the fries over, apply more Prairie Potato Blend, spread the unpeeled garlic cloves on top of the potatoes, and bake for another 25 minutes.

Serve the fries with Chargin`Cheddar Dip (1 T. mix with 1/2 pint of sour cream) by Wild West Spices.

Dill Mountain Chicken Salad Sandwiches
Ingredients Needed:
2 cups cubed cooked chicken
1/2 cup chopped celery
1/2 cup chopped onion
1 tsp Dill Mountain Spread
1/2 cup chopped walnuts or pecans(optional)
1 cup of chopped Red Delicious apple
1 cup mayo
1/4 cup grated parmesan cheese(optional)


dark rye bread slices or other bread of your choice(lightly toasted)

Combine the all 8 ingredients in a medium bowl mix until blended, set aside
Toast bread,
Assemble sandwiches and enjoy!

Try adding tomato slices and lettuce
Makes 4 sandwiches

Hearty Stampede Salsa Chili
Ingredients Needed:
2 lbs ground beef, turkey or buffalo
1 md onion chopped
4 cloves garlic chopped
1 cup sliced celer
1/2 cup green bell pepper chopped
1/2 cup red bell pepper chopped
1 (28oz) can diced tomatoes
1 (6oz) can tomato paste
1 cup water
1 tsp salt
2 1/2 T Stampede Salsa mix
1 (15.5oz) can red kidney beans
1 (15.5oz) can black beans
1 (15.5oz) can white kidney beans or navy beans

In a md skillet, brown meat with onion, celery and
garlic. Drain and set aside.
In a lg pot add the remaining ingredients except beans and bring to a boil. Add meat contents from skillet and simmer for 1 hour.
Drain and rinse beans and add to pot of ingredients. Simmer until throughly heated.
Serve with crackers, tortilla chips, or corn bread
Makes 7 servings

Dill Mountain Sauce (For salmon, trout, catfish, or cod)
Ingredients Needed:
2 T butter
3 tsp Dill Mountain Spread
1/2 cup cream
1 tsp lemon rind grated
1 T olive oil

Put everything together in a sauce pan and heat on
low until warm
Serve on any cooked fish of your choice with wild rice and asparagus on the side

Savory Grilled "Wyoming Steak Rub" Beef Steaks
Ingredients Needed:
2 (1 inch thick) top sirloin or london broil steaks
2 tsp grated parmesan cheese
4 tsp Wyoming Steak Rub(WSR)

In a small bowl combine WSR and steaks; press WSR
evenly onto steaks.
Place steaks on a grid over medium, ash-covered coals. Grill, uncovered, 15 to 18 min for med rare to med doneness, turning occasionally.
Take steaks off the grill when done and sprikle with parmesan.

Cowboy Cajun Pecan Pork Chops
Ingredients Needed:
1/2 cup pecan halves, toasted
1/2 cup fine, breadcrumbs
1 1/4 tsp Cowboy Cajun seasoning
6 (4oz)boneless pork chops
1/4 cup flour
1/2 cup buttermilk
Cooking spray

Preheat oven to 425 degrees
Process in a blender first 3 ingredients until pecans are finely chopped
Dredge pork chops in flour, dip in buttermilk, and
then dredge into pecan mixture.
Arrange pork chops on a rack coated with cooking spray and place rack on a 13x9 inch pan
Bake at 425 for 15 minutes, turn chops and bake
for 5 more minutes or until done
Makes six servings

Cowboy Cajun Chicken Jambalaya
Ingredients Needed:
3/4 lb boneless skinless chicken breasts, cubed
1 T olive oil
3 cups chicken broth
1 1/2 cups uncooked rice
4 oz smoked sausage, diced
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 to 3 tsp Cowboy Cajun seasoning
2 garlic cloves, minced
1 bay leaf
1 (14.5oz) can diced tomatoes, undrained

In a lg skillet with olive oil saute chicken for 2-3 min.
Stir in the remaining ingredients and bring to a boil. Reduce heat, cover and simmer for 1 hr or until liquid is absorbed and rice is tender.
Remove from heat and let stand 5 min.
Discard bay leaf and serve.
Makes 6 servings

Fiery Yahoo BBQ Baked Beans
Ingredients Needed:
4 oz chorizo, thinly sliced
2 1/2 cups chopped onion
1 cup chicken broth
1/3 cup packed brown sugar
1/3 cup cider vinegar
1/3 cup bottled chili sauce
1/3 cup dark molasses
2 tsp dry mustard
2 tsp Yahoo BBQ seasoning
1/4 tsp ground clove
1/4 tsp ground allspice
1 (15oz) can black beans, rinsed and drained
1 (15oz) can pinto beans, rinsed and drained

Preheat oven to 325 degrees
Heat a Dutch oven over md high heat.
Add chorizo, saute 2 min.
Add onion, saute 5 min. stirring occasionally
Stir in broth and remaining ingredients, bake uncovered for 1 hr
Makes 10 servings

Western Honey BBQ Beef Short Ribs
Ingredients Needed:
4 to 6 T Western Honey BBQ blend
7 lbs trimmed beef short ribs

Sauce:
1 sm onion chopped
2 tsp vegetable oil
1 1/2 cups water
1 cup ketchup
1 (6oz) can tomato paste
2 T brown sugar
Pepper to taste

In a bowl rub Western Honey BBQ over ribs
Place ribs in 2 lg resealable plastic bags
Refrigerate overnight
Preheat oven to 325 degrees
Line 2 (15X10X1 inch)baking pans with foil
Grease foil
Place ribs in pans
Bake uncovered for 2 hrs or until meat is tender
Meanwhile in a lg saucepan saute onion in oil until tender
Stir in ketchup, tomato paste, sugar and pepper
Bing to a boil, reduce heat, cover and simmer for 1 hr
Remove ribs from oven. Grill ribs over indirect md heat for 20 min, turning and basting frequently with sauce
Makes 14 servings
